Dont know about Florence but in Sorrento for our Honeymoon we stayed at the Grand Hotel Riviera - STUNNING hotel that is on a cliff looking out on Bay of Naples -

It has its on jetty / private beach area that you get down to via a lift built into the friggin cliff! - it was FAB, food is ok and we could only get half board but it was worth it cos the hotel was amazing.
A bit cheaper and more central (in the town itself) is the Grand Hotel Flora where we stayed on hols this year - nice food, nice staff, if you ask for a pool view room or a sea view room (which is on one of the higher floors) you also get an amazing view of the Bay of Naples.
