Red wine and leaving it uncorked........

Okay apologies for yet another wine question, but I can't find anything on it when I searched for it..........
So it's prob common knowledge but I was wondering about letting air into red wine (doing a bit of wine tasting these days :innocent: for the wedding of course!!)

If you aren't going to finish a bottle off......for example you have a glass or two and you have left the cork/lid off for a few hours, what do you do to store the rest?

I've been putting the lid/cork back on the wine until the next evening for example, but is this what you should do, or should you leave it off altogether? And if so, how many days could you leave it uncorked before it would go bad, and is it bad to put the cork back on after the air has gotten into it???

Sorry about all these questions ( and wine posts) !

It totally depends on the wine to be honest.
I would usually put the cork back in, or you can buy "stoppers" that you can put back in much easier than a cork. It will go "off" much quicker if the cork is left off.

Hi Ria,

Wine unfortunately oxidizes pretty quickly - the best way to slow down this process for a red wine (without purchasing a preservation kit or pump) is to put the cork back in and bang it in the fridge overnight. Take it out in the morning before you go to work and it'll be back up to correct temperature by the time you get home. The lower temperature slows down oxidation and will keep it in better shape for the next day. However most wines won't make it beyond 48hrs in good shape! Once they've started to lose their quality use it for cooking wine!

Apart from what's been mentioned - you can use those little 1/4 bottles you get in pubs or on planes to store small amounts of leftover wine. It helps to keep the wine for longer because you can fill the bottles full - and there's no room for air, so the wine will last for longer.

Could you stick a tissue in the top if you cannot get the cork back in or would that allow it to become oxidised too fast ???

Red wine doesn't keep for more than 2 days I find - it tastes nasty on the 3rd day! Such a waste isn't it!!

I would never put red wine in the fridge.

Unfortunately nothing will stop air unless it provides an hermetic seal! Even a cork jammed back down the neck with all your might won't keep it out!
