Easy Banoffee recipe?

Hi All,

I'm not a big lover of desserts but my sisters are coming for dinner on Friday so I said I'd make a bit of an effort :o) Anyone got any foolproof recipes for banoffee? :wv

This is one of my favourite deserts and its so simple.

Base: digestives crushed and mixed with melted butted, how much depends on the size of the dish and how thick you like the base. I usually do about 3/4 inch thick base.

Toffee: I make a big dish and used two tins of condensed milk that I have boiled in the tins for 2 hours, this can be done in advance and tins need to cool before putting on base. You can also by tins of the toffee same brand as the condensed milk but I've never tried these.
Usually put just about and inch and half thick.

Next the banana layer, don’t put the banana's flat do them at an angle and layered on top of each other this gives a good layer of banana

Then whipped cream and flake on top.

Its very easy do it and you could do whatever size dish you like.

You could try this one either. It's from BBC Good Food and it' sort of a cheats banoffi, you go it all in glasses so you don't have to worry about getting the base right or it falling apart when you try to cut it into slices, plus it actually looks really good and like you've spent ages on it ;o)

It really is, my husband couldn't believe how easy it was to make his favourite desert and has been making it for himself ever since. i usually do it in stages, if i was making it for Friday i'd boil the tins of condensed milk tonight (make sure the water stays boiling and the tins are alwasy covered in the water, or buy the tins of toffee), so the base tomorrow evening when i come in from work and stick in the fridge for an hour or so, then put the toffee on top of the base and back into the fridge again.
the bananas and cream can go on friday and then back in the fridge
i really want some now!

i found a nice recipe for something like i made last week. It's very easy and looks nice. 30 minutes max. It's called Millefeuille of Irish Strawberries.
