royal icing- what cake?

royal icing- what cake?

Hi guys,

I'm going to make my own cake but i'm not sure which cakes to use. I don't like 'fake' icing, I've always preferred royal icing- I know that this is great with a fruit cake- but can I use it on any other types?

Would it be ok with a carrot & walnut cake? Maybe a madeira flavour cake too?

What type of icing do you mean when you say 'fake'? Is it the fondant that is more commonly now used for wedding cakes? Royal can be more awkward as it needs time to dry and if you are using anything other than fruit you may not have that time. It is more difficult to get an even finish if that is what you want. If it gets too hard then it just falls off the cake as it is cut. Realistically you are only going to eat a small amount of cake so perhaps you could do top tier fruit with the royal icing and the other tiers in different flavours.

Thanks, yeah it is the fondant icing- I really don't like it at all! I will mull over either all fruit or as you suggest one tier and the rest in fondant.
