Chicken as only meat option

Hi,
We're getting married in August and have chosen a fabulous venue (!) but are now trying to keep within our budget. We've opted for chicken as the only meat dish, with fish and vegetarian options available also. As a result we're trying to make sure that our chicken dish will be to most people's taste. We tried the dish suggested by our venue (chicken stuffed with black pudding) and it was amazing! However most people don't like or at least don't think they like black pudding.

Anyone got any other suggestions? White pudding? Trying to avoid cheesy fillings...

I had chicken stuffed with mango once it was yum!

Hi. I personally love black pudding, but coming from a family of fussy eaters I can tell you now, they wouldn't eat it. Unfortunately by writing off the cheese fillings, it's kind of limiting the options.

I think I'd be tempted to just stick with a herb and breadcrumb stuffing, maybe made with sausage meat. Not the most adventurous, I know, but at the end of the day, it'll be a crowd pleaser.

Other potentials could be;

Creamy mushroom and tarragon

Kiev (garlic butter) or

Chorizo (goes well with chicken)

That sounds yummy to me, I'd love to try it. Cheesey stuff puts me off.

Can't please all the people though and you know your family best so if you think they won't like it nitty's suggestions sound lovely too.

Thank you all. It's further confused by the fact that I'm veggie and won't be eating it at all! It's so hard to please everyone especially when we've a limited few options.

Any other wisdom on it would be gratefully received!

I would definitely give that a go, but I know people can be so fussy, I'd be wary of it. Maybe traditional stuffing would be best. I do quite like chicken with cheese and bacon, but if you're not wanting the cheese...

Would there maybe be a sun dried tomato type stuffing? and spinach?

I think just chicken and stuffing, like the normal herby bread stuffing, is a good non-offensive option that most people would like. I agree about the black pudding one not appealing to everyone...
