Strawberry Beds wrote:Bridester, you can get 'smoothers' from cake shops - they are like little plastic trowels for cake making and you can hold the cake on a turntable, or if you don't have one an upturned plate will do and you keep going round and round until the sides are smooth. Don't put too much butter cream on as it can get warm and bulge. Also one of the best ways to get the icing smooth is to use a lump of sugarpaste and in your hand and rub it on the side of the cake. Again, just keep going round and round.

Good luck.

Thanks hon, doing another practice run tomorrow so I'll try to follow your tips! Cheers!

I'm just wondering if anyone has any advice on actually transporting the cake, whether its 3 seperate tiers or a stacked cake, this is the part thats worrying me the most, I helped my sister with my own cake, we transported it in 3 seperate cake boxes, 1 tier in each, and 1 box on everyones lap in the car and me driving...but what if I can't get 3 people to accompany me??? I'm doing a cake in october for a friend and am worried about transporting it, any advice would be greatly appreciated!
Thanks

Personally I've done both - travelled stacked and unstacked. To be honest, both were equally good. Once the cakes are placed flat in the car (ie the boot or on the floor) they don't move too much. You shouldn't really carry cakes in the back seat as these tend to the slanted to will slide more.

If you're travelling with the cakes stacked, make sure the royal icing used to stick the tiers together has completed dried so that they are well set in place. Also ensure the cakes are well dowelled to prevent collapsing. I've only used this type of box once, but it can come in handy if you're nervous http://www.cakecraftshop.co.uk/shop/3/437/362/index.htm

If travelling without stacking the cakes, remember to bring royal icing to stick the tiers together when you get to the venue. Also give yourself time to reassemble and finish dressing (ie adding ribbons, edging detailing etc etc)

Last weekend, I travelled with an assembled topsy turvy cake so if I can do that with no damage with my driving skills, anyone can do it ;o)

Haven't used mats in the car but suppose they could do the job if you wanted to use them. I use silicone baking sheets when rolling out icing to prevent the fondant from sticking to the counter and prevents overuse of icing sugar (so that the icing doesn't get too dry) which you could double job and use them in the car. Got them from these guys on Ebay

Hope this helps :wv

I would always advising transporting cakes in the boot of the car, put the box right up against the back of the seat and they will not move. Anyone holding them is a bad idea because if you brake suddenly they will not be able to hold them whereas wedged against the back seat they cant go anywhere. I often do use the non slip mats, roll of stuff from €2 shop, and put a piece under the cake boards in the boxes to make sure they dont move around.

I would be reluctant to transport a cake stacked unless it were a short distance and always stack them at the venue, however I have never stuck them together when stacking, in fact the opposite, I always put a circle of baking parchment between tiers so that they won't stick to ensure taking them apart is easy for the hotel staff and
to avoid damage to the cakes.
