Whats for lunch

Whats for lunch

Postby Sticks'nStones » Mon Nov 22, 2021 11:50 am

:?:
So looking forward to my lunch today. I made bombay potatoes yesterday (chopped up potato, tin of tomatoes, fried onion and bombay spices by schwartz) very low in fat only fat is in the potatoes
I am having that in pitta bread - with a tomato cup-a-soup and 2 mandrin oranges.
About 6 points all in.

Lma - the recipe is so easy that I can do it and that is saying a lot believe me.

The main ingredients are:
1 lb of potatoes - peel them and cut them into cubes and then par boil them.
1 tin of tomatoes - any type will do.
1 onion - sliced and fried.
2 tbsp of Bombay spice - this in in the indian spices section of the supermarket (even down here in the sticks of Cork) It is a tall plastic container that has all the main indian spices in it mixed together.
Basically:
Cook the potatoes and set them aside. Fry the onion and then add in the spices. Fry this for around 2 minutes (if the smoke alarm doesn't go off they have not been cooked enough)
Add in your tomatoes and your potatoes - mix it well and simmer for around 10 minutes. I always think it is nicer the second day as it seems to get even hotter.
Easy - anyone could make it.
