Saw these on the SW site today and will def be giving them a go - they look yum!

Strawberry Cupcakes, they're the perfect sweet treat at just 2½ Syns each.


informationServes: 16
Prep time:
Cook time:
Syns per serving:
2.5 all plans

ingredients
3 eggs
60g low fat spread
6-8 tbsp artifical sweetner
110g self raising flour
2-3 drops of vanilla essence
½ tsp strawberry flavouring

To decorate
8 level tsp icing sugar plus extra for dusting
A couple of drops of food colouring
Fresh strawberries, halved

method
1. Preheat the oven to 180°C/Gas 4. Put paper case in a mini muffin tin. Whisk together the eggs, low-fat spread and sweetener. Sieve the flour then fold in the flour with the vanilla essence and the strawberry flavouring.

2. Spoon into the paper cases and bake for 15-20 minutes. Remove and cool on a wire rack.

3. Mix a few drops of water and the food colouring with the icing sugar. Spoon on the cakes. Garnish with halved strawberries and dust with icing sugar.

Salmon and Prawn fried rice
This is my own recipe and I think its may be syn free but because I add the ready made chilli that you can get in the tubes in the herb section I have given it one syn.

Ingredients
2 salmon darnes
Large handful of prawns
Bag of boiled white rice
1-2 carrots
handful of mushrooms
Handful of broccoli
I shallot/onion
I clove of garlic
(and/or any other veg to hand)
Chilli
Salt/pepper/spices


Method

1. Chop all veg
2. Spray fry light in a wok and let it heat up
3. Place seasoned salmon in the oven for 12 mins (actually not sure of temp, i just put it on to 180).
4. Put on bag of rice for 10 mins or as directed on pack
5. Fry shallots, garlic and chilli for a min or 2
6. Add rest of veg
7. Add prawns to wok and cook til pink and cooked through
8. Take salmon from oven, flake it so there is no skin attached and add to wok
9. Drain rice and add to wok
10. Add any spices that you like and stir fry until all flavours are combined
11. Enjoy!

If you think I have calculated the syn value wrong let me know!!

Going to resurrect this for new SW members :o)ll :o)ll :o)ll

Spaghetti Carbonara
Serves 2
Free on Extra Easy

Ingredients

175g dried spaghetti (s)
2 rashers of smoked bacon, chopped into small pieces
2 eggs
100g Philadelphia extra light cheese spread (1Hea)
Handful of fresh chives

Method

Cook spaghetti as per packet instructions
Cook the Bacon in a dry frying pan until done then remove and put to one side.

Break 2 eggs into a bowl and beat them together along with seasoning, chopped chives and the Philadelphia cheese.

Remove and drain the spaghetti then return to the saucepan, add the contents from the bowl and stir gently over a low heat until the eggs have set.

This is brilliant!!

Slimming World Curry Sauce & Rice - Free on EE


Ingredients:

1 Onion
794gs Chicken
4 large Potatoes
6oz Spinach
2 tablespoons Curry Powder
400g Chopped Tomatoes
14fl oz Water
Frylight
Coriander
Mint leaves

Method:
Place a large frying pan over medium heat, spray with fryight, add the onion, chicken, potatoes, spinach and curry powder. Stir to mix well. Stir fry for 2 - 3 minutes, add chopped tomatoes and water and bring to the boil. Cover and reduce heat to low. Cook gently for 25 - 30 minutes or until chicken and potatoes are cooked through and tender. Remove from heat and season well with salt and black pepper. Stir in chopped coriander and mint leaves and serve with rice.

Looks horrible but it is really nice!!

Ragatoni with Beef Ragu - Free on EE

Ingredients:
1lb extra lean minced beef (I use Quorn - better job)
4 rashers of smoked back bacon (fat removed) chopped
2 garlic cloves
1 leek finely chopped
1 red pepper chopped
2 carrots chopped
1 teaspoon dried oregano
fresh basil finely chopped
400g chopped tomatoes
12oz pasta

Method:
Place a large non stick frying pan over a high heat. Add beef and bacon (I cook the bacon beforehand, I'm fussy) and cook for 4 - 5 minutes until the beef is browned all over. Add garlic, leek, pepper and carrots and cook for a further 5 minutes. Add the oregano, basil and chopped tomatoes. Bring to a simmer and cook for 10 minutes. Serve with the cooked pasta.

This is really yummy for all those spag bol lovers. I could live on this!

All dried pasta is free yes, its only the fresh pasta that has syns in it.

I made the vegetable quiche and the chilli beef last week and both were yum had them with a baked potato. Had a small portion of mashed avocado (4 syns for about a quarter of an avocado) with lime juice with the chilli and it was really nice.

1 Syn StirFry

serves four
4 small chicken fillets/1 small pork steak /1 lb sirloin steak
1 onion sliced or chopped
1 red and 1 green pepper sliced thickly
mushrooms quartered
a piece of white cabbage thinly sliced
some mangetout peas
crushed clove of garlic
teh following may also be added ....thinly sliced carrots /baby corn/ bean sprouts /spinach /pakchoi/

stirfry sauce
1/4 pint of strong stock /1/2 a standard mug
1 tbsp dark soy sauce
1 tbsp cider vinegar
1 crushed clove of garlic
1 tsp cornflour ...if you want to leave out the cornflour and
make the whole thing syn free add 1 dsrtsp of tomato paste instead

make up the sauce by mixing all the ingredients together

slice up the meats thinly and spray with frylite
heat up the wok
and stir fry the meat in a hot wok ..make sure chicken and pork is cooked
add the onion and stir fry for a few mins
add rest of the ingredients and stir for a few mins
stir sauce and pour over the stirfry and cook till sauce is thickened (a min or 2 )
if your adding spinach stir in at this point

you can tweek the sauce by adding other flavourings but dont forget to add syns accordingly ...
grated ginger ,thinly sliced chilli . 1 tblsp of tomato ketchup , a little artificial sweetner
vegetarians can add a can of drained beans /quorn pieces/tofu
