When to make wedding cake ?

How far in advance can you make the traditional fruit wedding cake ?

I wasn't going to bother with a cake and just have a selection of cakes/pies on a table instead but my parents are passionate about this one so I'll let them have it. My mom used to make Christmas cake years ago but has forgotten how far in advance she would make it. I'm convinced monthsin advanve ! My wedding's end of June and I was hoping my mom andI could bake it soon. We did a trial one already and it was nice just a tad dry- any suggestions on fixing that problem are also welcome!

If your making fruit cake... ASAP!!!!

I make my Christmas Fruit cake now for Christmas every year and it does b really moist!!!!

If you make it now it should be ok for June... Make sure u soak the fruit well!!! :) :hic :hic :hic

It will be fine to make it now for end of June, 3 months ahead would be the usual guideline but a little either side of it won't matter. For a really moist cake, as suggested, soak the fruit first or use a recipe that heats up the fruit and alcohol, butter, juice etc before baking. Make sure the oven is not too hot as the long baking can cause dryness, in my opinion max 120 fan oven. I am not a fan of pouring booze on the cake for weeks on end as was always done as it can make it too soggy if you are not careful. Fine for a Christmas cake at home, not so good for a cake that needs to be cut into neat finger portions for serving at a wedding.

http://www.bbcgoodfood.com/recipes/1160 ... stmas-cake - in my humble opinion this is the best fruit cake recipe for wedding cakes, always moist, I do add the small bit of extra alcohol when cooked as the recipe says but I do add any more at any future stage. Keeps for far longer than 3 months and does not require freezing at all. I also use sherry rather than brandy but that is just a cost issue, any alcohol will do really.

Cake is in the oven and mixing the smaller tier/cake now. Followed your link yumyumcake and it smells unreal ! Fingers crossed til June then ! delighted O-O
