bridester I was just thinking, there is a coconut juice in Dunnes Stores it's by Kari or Kali(or something like that) you will find it in the health food section by the soya milks, maybe if you are stuck this may give the extra taste?

sunnyk I will post that recipe later on, must dig it out.... (it really is yummy and so so so easy to make never fails to impress, it has margarine in it and not butter which may sound strange but trust me yum yum - and don't substitute butter it makes it a lighter cake with the marg') I must make the dinner now though!

Here goes
cooking time is 30-35 mins
use 2 x20cm(8in) sandwich tins
Ingredients
350g plain flour
half tsp baking powder
2tsp bicarbonate of soda(bread soda)
large pinch of salt
110g cocoa powder
425g(15fl oz) of cold water
225g margarine
600g caster sugar
4 large eggs
180g apricot jam(i use strawberry)

preheat the oven to 180c/350f/gas mark 4, (grease the two tins with greaseproof)
sieve the flour with the baking powder, soda and salt. Blend the cocoa with the water and set to one side. Soften the margarine with a wooden spoon and add sugar, cream until light and very soft. Whisk the eggs until frothy and add to the creamed sugar mix a little at a time and beat well after each addition. Stir in the flour alternately wit the cocoa and water. Divide the mixture between 2 tins and bake for 30-35 minutes, or until a skewer inserted into the centre comes out clean. leave to cool for a few minutes in the tin before turning out on to a wire rack, leave to cool completely before filling. Now this recipe says to drizzle carmel over the top which I will give you the ingredients for but I use chocolate frosting so ill give you that too.
100g caramel chocolate(good quality)broken into pieces
1 tablespoon cream or milk
melt choc suspended in a heatproof bowl over a pan of water. When melted remove from the heat and add the cream. Leave to cool and then drizzle over the cake
frosting
2 3/4 cups icing sugar
6 tablespoons cocoa powder
6 tablespoons butter
5 tablespoon evaporated milk
1 tsp vanilla essence
sieve icing sugar and cocoa together, in another bowl cream butter until smooth. Add in sugar mix and evaporated milk alternately bit by bit, blend in vanilla and beat until light and fluffy. You can add more milk if too thick or vice versa add more cocoa if too runny.

Now what I do is I get the layers of cake,( sometimes I make a 3rd,) put the jam on top of one layer, then cream on top of that(add bit of vanilla to cream yum) then layer with chopped up strawberries, put next layer on and either repeat again if you have a 3rd or just finish it off and spread the frosting along the cake with a knife. Decorate as wished with "happy birthday xx" or strawberries on top again.

You said the cake was for your nieces birthday right? I usually make my "famed" sweet-shop cake for kids parties: it's just a normal sponge with whatever filling they want and a simple buttercream frosting BUT...it's arranged in 3 (small) tiers so it looks like a mini wedding cake and covered in their favourite sweets! I've done it in LOADS of flavours...the most popular is normal vanilla sponge, with raspberry jam in the layers and vanilla buttercream and then the sweets and some sparklers. I'm trying to find a pic and if you want the recipe still then let me know. Again, I'm really sorry for not spotting this until now :-8

I'm oney delira with myself, I made my first ever soda bread yesterday! I used a Rachel Allen recipe for white soda and threw in a couple of fistfuls of mixed dried fruit (raisins, sultanas and cranberries) and it was gorgeous! I had it for my brekkie this morning with a cuppa :o0 Definitely making it again!

Have to start thinking about DD's birthday cake. I made a princess dress for her last year, but not sure I'll be up to something so dramatic this time! Your cake sounds great HippyChic, must file that one away.

Oh I just put a chocolate cake in the oven, no harm!! I am afraid to say though I cheated and bought the chocolate fudge ready made frosting, :-8 (see my ticker, not able for long periods of standing at the mo!), but I DO plan on writing happy birthday on it in frosting if you could recommend a nice easy frosting to make for that? Much obliged, hope the cake turns out nice, I think I got it on this thread!

Oh, and please do post a pic and the recipe for the sweet shop cake it sounds YUM and I will have good reason to be baking it soon enough!

Is that the Betty Cocker choc-fudge frosting? I've bought it before myself, it's lovely! (full of all sorts of bad stuff but really yummy! :o0 ) Dr Oatker (sp) do these little tubes of icing designed for writing with, they have the perfect size nozzle and all. If you have no icing bag and slim piping nozzle then I'd recommend them, the icing consistency is spot on and they've gotten me out of a tight spot or two. They'll keep for a few months as well.

Can't find that pic anywhere, on computer or old phone. Will get the parents to email me a copy, want to have it for future reference myself anyway. Can't believe I lost the pics I had myself :duh:

Yes HippyChic its the Betty CRocker one, smells sooo nice I hope it will still be there in the morning and my husband hasn't snuck downstairs to eat it!
I have a cake decorating set that I got for a Kris Krindle present, so hope to use that, want to put some flowers and cute stuff on it for her :lvs

Made a loaf of walnut & treacle brown bread this morning - just fab - soooooooooo tasty with a big load of real butter on it...mmmmmm

Walnut and Treacle Brown Bread

450g (1 lb) Wholemeal Flour
55g (2 oz) Porridge Oats
55g (2 oz) Wheatgerm
55g (2oz) Chopped Walnuts
55g (2 oz) Butter
1 Large tbsp. Treacle
1 tsp. Breadsoda
½ tsp. Salt
18 Fl. Oz (1/2 Litre) Buttermilk
1 Egg
½ tbsp. Seasme Seeds (For Top)

1. Preheat Oven to 200 degrees Celcius/ Gas 6
2. Place walnuts in a pan with the butter keep on heat until the butter is melted.
3. Mix all dry ingredients together.
4. Mix buttermilk & egg togetherand add to treacle and whisk together.
5. Add to dry ingredients and mix well.
6. Put into loaf tin and smooth out the top with a spoon dipped in cold water.
7. Sprinkle with seasme seeds and bake for 1 hour.

Remove from tin and cool on a wire rack.

***Tip i learned aswell today, if you don't have buttermilk you can make your own by adding 1 tablespoon of lemon juice to half litre of milk!***

Girls need some help! I've offered to do some baking for a sale at work this week. I'm planning on doing mini pavlovas which I've done before but would also like to do some cupcakes as I've loads of eggs (duck eggs which are meant to be great for baking).

Have any of you got some nice recipes for plain, chocolate or red velvet cupcakes? Might try do a variety if I have the time. Also need recipe for the icing.

I am going to make Nigela can't fail cream and jam sponge to take along to my cousins confirmation (party in there garden)

Oct09bride google nigela sponge and this recipe will come up it is lusssshhhh , slightly greasy so I may take a little butter and substitute with a drop of milk see how it goes. But it went down a treat here when i made it last sunday

Made these last week and were yummy. I find the recipes quite good on the Odlums website:

Shortbread
Ingredients:
125g/4oz Odlums Cream Plain Flour
50g/2oz Cornflour
125g/4oz Butter (softened)
50g/2oz Caster Sugar
Method:
1.Beat butter and sugar together until smooth. Wooden spoon or electric mixer may be used!
2.Add the flour and the cornflour and mix gently until a dough is formed.
3.Use finger tips to form dough into a ball and lightly knead, if necessary.
4.Press dough into a greased 8"/20cm round. A sandwich tin may also be used.
5.Prick around top of dough with a fork.
6.Bake in a pre-heated oven 160°C/325°F/Gas 3 for about 20 minutes or until very pale in colour.
7.Allow to set in tin for 5 minutes; then transfer to a wire tray to cool.
8.As soon as shortbread is cold, store in an airtight tin.
9.For biscuits, roll out mixture and cut out rounds using a 3"/7cm cutter shape. For fingers, press dough into a 7"/18cm square tin and cut into fingers after baking.
