Duck eggs are great for baking but they tend to be slightly larger than hens eggs so you need to use less of them (i.e. 2 duck eggs instead of 3 hens eggs, that's the approximate ratio if I remember correctly).

Oct09bride I always make cupcakes using this recipe and everyone loves them:
(this will make about 26/28 depending on size).

8 oz caster sugar
8 oz margarine
8 oz self raising flour
4 eggs

Mix sugar and butter well. Sift flour and add eggs and beat well until smooth. Can't rem how long I bake them for but just keep an eye on them.

I usually make it in 2 batches as sometimes put chic chips into them (white or milk). Made them yesterday for a friend and put white choc chips in one batch and pieces of fudge in other. Dr Oetker do small bags of them.

For the icing (this should be enough but sometimes depending on how many buns I've gotten from mixture.

1 teaspoon vanilla essence
1 tablespoon milk
250g icing sugar
110g softened butter

Add vanilla essence and milk and sift in flour. Add butter and mix until smooth. If you want to add colouring add small bit as too much makes icing too runny. I have loads of little jars of dr Oetker toppings as well - coloured polka dots, pearls, butterflies, stars, choc sprinkles etc. also bought edible paper flowers on eBay and you just cut out the picture and stick it on top of icing.

HippyChic I am delighted you posted your blog - have had a look through and already see quite a few things I am gonna put on my list to make!!!

Made some orange choc chip muffins yesterday - didn't put enough orange in them though so will do better next time! (They are still getting scoffed in work this morning though :o0 )

I made the Marian Keyes brownies a couple of weeks ago and they were FAB. Have had a few bakery fails since then though :weep Tried "dohnut cupcakes" but the jam in the centre all sunk to the bottom :o( And my blueberry muffins this w/end were rubbish!

ah sunny k I have the best blueberry muffin recipe, it's out of a cookbook i've had for years and they are yum every time I make them. I'll post it for you. Oh and with your jam centre did it say to add the jam while cooking? Usually with anything like chocolate sauce, strawberry etc I would add them after cooking??

BLUEBERRY MUFFINS
8oz plain flour
1 tsp bicarbonate of soda
1/4 tsp salt
1 tsp mixed spice
4oz caster sugar
3 egg whites
3 tbs margarine
150ml natural or blueberry flavoured yoghurt
1 tsp vanilla extract
115g/4oz fresh blueberries

preheat oven to 190/gas mark 5/375f. Line a 12 whole muffin tin with paper cases. Sieve flour, soda, salt and half the mix spice in a large bowl. Add 6 tbs of the sugar and mix well. Lightly whisk the egg whites together with a fork in a separate bowl, add the margarine, yoghurt, and vanilla extract and beat until blended then stir in the blueberries until thoroughly mixed. Stir in the flour mix until just blended(do not over stir - lumpy is fine)
spoon the mix into the paper cases. fill them about 2/3 full. Mix the remaining sugar and the mixed spice then sprinkle over the top of the muffins. Bake in a preheated oven until springy to the touch about 25 mins.(I usually check with a skewer too) Leave cool in the tin slightly, then transfer to a wire rack.

(I've made these so often I find when sprinkling the final mix over the top I use less mixed spice than stated I leave more in the regular mix and just a tiny bit for the top but that's just my preference. Also I have made them with both natural and blueberry yoghurt and the blueberry ones are nicer but again that's just me)

Healthy baking...carrot cake (can be made as cupcakes for little hands to hold) without icing, butternut squash buns (same as carrot cake but with finely diced squash instead of carrot basically). Am on the hunt for some healthier recipes at the moment myself so will let you know if I stumble across anything good.

I do have a recipe for crumbly raspberry and oat slices on my blog (shameless self promotion again, sorry :innocent: ) that are lovely and quite healthy. Oat based cookies, flapjacks, that sort of thing are always good too. You can add raisins or other dried fruits and nuts to them to add interest and texture (whilst still getting good stuff in!).

HippyChic - love your blog! I've just printed off the frosted youhurt orange cake, orange milk chocolate truffles, scrumptious chocolate orange cake & simple chocolate sponge ... they are all on my list for the next few weeks! (Can you guess that I :lvs orange choc?! :o0 )

Top tip: I bought a bottle of orange essence - whenever I make hot chocolate I add a drop or two (that's ALL you need) to the milk and chocolate whilst I heat it. You end up with what tastes like liquid Terry's Chocolate Orange. Seriously, you need to try this! Add a topping of whipped cream and a few marshmallows if you're feeling really naughty but the orange essence is a MUST!

I made this chocolate coconut slice tray bake thing tonight - only the easy stuff for me :o0

It was simples and yummy but only if you would be really into choc - quite rich if you aren't a chocolate lover. Anyway here is the recipe....

I want to try a recipe that uses self-raising whole meal flour. Can I just add baking powder to w/meal flour instead and if so, in what ratio??

You can buy self-raising wholemeal but if you have regular wholemeal you want to use up then it's roughly 1 cup wholemeal to 1/1.5tsp baking powder and pinch/0.5 tsp salt. The coarser the wholemeal the more you need hence the varying quantities, also depends on how much you want it to rise (e.g. wholemeal muffins I use SR wholemeal flour and still add baking powder to give them some extra oomph!) HTH :)
