Tried another healthy recipe today.....courgette & raisin muffins from an Annabel Karmel recipe. They are yummy! Highly recommend them. I used a raisin/sultana/cranberry mix instead of just raisins. Here's the link to the recipe

After reading this thread yesterday I did the same as the rest of ye's and decided that I wanted to do a bit of baking!

HippyChic I made the healthy muffins that you posted, they're really lovely! I actually scanned all the ingredients into myfitnesspal and they're coming out and around 128kcal per muffin :)

The hubby has said he's like a bit of wheaten next, does anyone have a nice wheaten bread recipe?

I'm going to try and bake something at least once a week now, thanks girls :thnk

Hippychic, thanks for posting your blog, gonna try your tea loaf this weekend (presume I can make it with 'normal' tea bags as I don't have any Earl Grey?)

Made my lemon drizzle cake yesterday, annoyingly it had a hole in the middle, think I took it out of the oven about 5 mins too early as I've made it loads before and never had that problem before, still ate around it tho!!

Anyone got a tried and tested, nice easy recipe for a coconut sponge cake or coconut bread?

haha i made scones today, they were yum. and so easy to make

12oz self raising flour
1/4 tsp salt
1 tsp baking powder
3oz cold butter, cubed
4 tbsp golden caster sugar
150gm pot full fat natural yoghurt
4 tbsp full fat milk
1 tsp vanilla extract
1 egg beaten with 1 tbsp milk to glaze
*OPTIONAL, 85g sultanas, glace cherries after you add the sugar



1) put a baking sheet in oven at 220C/200C fan/gas 7. Puth the flour, salt, and baking powder in a food processor, then whizz in the butter until it disappears. pulse in the sugar, tip into a large bowl, then make a well in the center.
2) arm the yoghurt, mailk and vanilla together in the microwave for 1 min, or in a pan, it should be hot and may go a bit lumpy looking! tip into the flour mix, and quickly work in using a cutlery knife.
3) tip the dough onto a floured surface, fold the dough a few times, then roll out to about 4cm, and cut out with a 7cm cutter. brush tops with egg, scatter flour onto hot baking sheet, then lift the scones on. bake for about 12 mins or until golden brown.

i'd no vanilla essence, and i used white caster sugar and they were grand. they're so yummy served hot with rhubarb and ginger jam!!

Made another banana loaf yesterday. Always seem to have black bananas in the house.
I use the Weightwatcher recipe below but dont dont always have use the cranberries, and I use half wholewheat half white flour to make it more healthier. I also put it in a loaf tin instead of muffin cases. Anyone got anymore recipes that use very ripe bananas?

Weightwatcher Banana and Cranberry muffins
200 g ( ) Flour, Wheat, White, Plain
2 teaspoons (as purchased) Baking Powder
100 g ( ) Sugar, Caster
1 serving(s) ( ) Ocean Spray Dried Cranberries
1 medium ( ) Egg, Whole
1 teaspoons (level) Vanilla Extract
50 g ( ) Spread, Low Fat, melted
100 ml ( ) Milk, Skimmed
1 medium ( ) Banana, mashed

Instructions
Preheat the oven to Gas Mark 6/200°C/fan oven 180°C. Place 8 paper muffin cases into a muffin tray.

Sift the flour and baking powder into a large mixing bowl. Stir in the caster sugar and dried cranberries.

In a jug, beat together the egg, vanilla extract, melted low fat spread and skimmed milk. Stir into the dry ingredients with the mashed banana until just combined. Spoon into the paper cases.

Bake for 20-25 minutes until risen and golden. Cool on a wire rack.

peonybaby I have a bold recipe that uses ripe bananas. Now I have not made these yet so I don't know what they taste like, these are my Easter Sunday treat for giving up everything for lent :-8
Banana whoopie pies with nutella cream cheese
I will, as said be making these Sunday so I will post photos and give my opinion on them!

Hippychic I have a question! I have come across recipes for flapjacks and stuff that use porridge oats so I got a big bag in Aldi. Have just seen a recipe for some cookies that I wanted to make but they need "rolled oats" - are these different!?

I don't think they are the same sunny k, but I always use them anyway, porridge oats that is, and the recipe turns out fine.

Peonybaby, I used this last week and it's not bad - http://www.catcancook.com/awesome-banana-muffin-recipe/ I put in 2 extra bananas (they were all fairly small) and left out the sugar as I was making them for DD and trying to avoid adding sugar. I think it could do with a bit of vanilla extract to give it a bit of umph. And, have you tried the banana pancakes that are so famous over on M&K?? http://properfud.wordpress.com/2011/01/ ... op-recipe/ I know they aren't strictly baking but they are a fab brekkie! I use self-raising flour as well as the baking powder to make them extra fluffy, and when I was out of yoghurt last week I threw in some buttermilk and it worked fine.

Trance, do you think there could have been an air hole in the cake mix? That happened me when I made a choc marble cake last week and I didn't bang it on the counter hard enough to get the air out.

I was very impressed with myself, I had 2 dozen buns made before 8 this morning! Just wondering, do you baking queens use butter, marg or a mix of the two when baking? I was using butter, but I didn't have enough this morning so just used stork and it didn't seem to make any difference.
