Weird!! Good thing I printed off the Rolo one before it went AWOL :o0

I made this carrot cake today for the first time and it turned out fabulous- very light and moist.

Carrot Cake recipe (with optional Walnuts!)
From: Martha Day, Complete Baking

For the Cake (half all measures for a smaller loaf cake)
2 Cups Granulated Sugar
1 Cup Vegetable Oil
4 eggs
2 Cups finely grated Carrots (usually ~3-4 Large carrots, grated at the smallest holes on grater)
2 Cups Flour
1.5 teaspoons of Baking Soda
1.5 teaspoons Baking Powder
1 teaspoon Mixed Spice
1 teaspoon Cinnamon
1 Cup Chopped Walnuts (optional)

Directions for the cake

First, if making the whole recipe which makes a large sandwich cake, prepare two 9 inch sandwich tins. If making half the recipe, prepare a 2lb loaf tin.
Preheat the oven to 190 Celcius.

In a large mixing bowl, combine the sugar,eggs,oil, carrots and chopped nuts.

Sift all the other dry ingredients into a separate bowl. Add by 0.5cup measure into the liquid mix, mixing well after each addition.
You will now have quite a liquid batter, fear not, that is the way it is meant to be.

Divide the batter evenly between the two tins, or the single loaf tin, depending on the size of the cake you are making.

Bake until a skewer poked into the center of the cake emerges clean (maybe one or two crummies will stick, but no liquid batter should be stuck to it). This will take ~30-40 mins for the large cake and ~30mins for the smaller loaf cake.
Check this cake regularly. It burns easily due to all the sugar, so if you don't know how your oven behaves, check every ten mins!
Leave to cool while you make the icing....

For the Icing (Again, half exactly if making smaller cake)
2 Cups Icing Sugar
1 pack Philadelphia (225g/8oz)
4 Tablespoons butter, very soft
2 Teaspoons of Vanilla Extract (not essence)
more walnuts for decoration if desired
melted white chocolate if desired

Combine everything (except optional walnuts and chocolate) for the icing into a bowl and beat until smooth.

Smaller loaf cake: Smooth over top and add some walnuts. Drizzle in some melted white chocolate if you want to be particularly bold.

Larger Sandwich Cake:
Take 1/4 of the icing and sandwich the two cakes with it. Spread the remaining icing over the top and sides. Decorate with walnuts if desired.

Missus has told me she would like to come home to the smell of baking today, she is on a half day today so I am gonna make some humble scones for lunch!

Have been lazing around all day with a headache so have decided to bake these for myself to cheer me up! Will add pics when they're done.

Sticky Gingerbread Buns
(makes about 16)

Cake mix
115g plain flour
2tsp ground ginger
three-quarter tsp ground cinnamon
1 piece stem ginger, finely chopped
three-quarter tsp bicarbonate of soda
4tbsp milk
85 butter, softened
70g soft dark brown sugar
2tbsp black treacle
2 eggs, lightly beaten
Icing
85g butter, softened
175g icing sugar
2tbsp syrup from the stem ginger
1 piece stem ginger, finely sliced, to decorate

Preheat oven to 160C/325F/Gas 3. Line bun tins with paper cases.

Sift the flour, ground ginger and cinnamon together into a bowl. Add the chopped ginger and toss in the flour mixture until it is well coated. Place the bicarbonate of soda and milk in another small bowl and stir to dissolve.

Beat the sugar and butter together in a large bowl until light and fluffy. Beat in the treacle, then gradually mix in the eggs. beat in the flour mix, then gradually add the milk mix. Spoon the mixture into the prepared cases.

Bake in the oven for 20 mins, or until well risen and golden brown. Allow to cool for 2 mins in the trays before removing to a wire rack and allowing to cool fully.

To make the icing put the butter in a bowl and beat until fluffy. Add the icing sugar and syrup and beat together until smooth and creamy. Spread the icing on top of each completely cold bun, then decorate with pieces of the stem ginger.

(You can turn these into gingernut buns by adding 40g finely chopped walnuts or pecans to the mix and then sprinkling with a few chopped nuts when iced).

Shameful confession time...I am sitting here eating the leftover icing from the bowl with a spoon while I wait on the kettle to boil so I can have coffee and a bun :-8

Here's a pic of the ginger buns anyway. God they're SOOOO good!

Oh boy some of these look fab!! Pity about the diet I'm suppose to be on :-8 Sunny K Rocky Road is my fav if you find a nice recipie will you post it pretty please.... the carrot cake looks yum too, rolo cookies and mint squares!! Mmmmm thank goodness it's home time!

Happily Ever After I found one on line today but e mailed the link to my work mail.... I'll stick it up here on Monday for you.

I went to pick up a few bits for my cookies this evening and tried 2 Supervalues and 2 Dunnes - no cocoa... Had to go to a Tesco and managed to get it there. Would have thought that was a staple ingredient!
