HippyChic I'd love that recipe - thanks!

Happily Ever After I found one on line today but e mailed the link to my work mail.... I'll stick it up here on Monday for you.

I went to pick up a few bits for my cookies this evening and tried 2 Supervalues and 2 Dunnes - no cocoa... Had to go to a Tesco and managed to get it there. Would have thought that was a staple ingredient!

Oh sure I was making some oriental dish one day, popped to Tesco to get ginger and was smartly informed by staff when I queried the absence of ginger on the shelves that they no longer stocked it as it wasn't being bought enough and kept going off. Must have been uproar about it as they have it back now! Anyway...

Rocky Mountain Cupcakes
(makes about 10)

Cake Mix
140g unsalted butter, softened
140g caster sugar
1tsp vanilla extract
3 eggs, lightly beaten
150g self-raising flour
55g cocoa powder (See SunnyK, it wasn't a wasted trip ;o) )
Topping
Chocolate buttercream*
85g mini marshmallows
40g walnuts, roughly chopped
55g plain chocolate, broken into pieces

Preheat oven to 180C/350F/Gas 4. Line a muffin tin with paper cases.

Cream together the butter and sugar. Beat in vanilla extract and eggs. Sift in the flour and cocoa powder and fold into the mixture. Spoon mix into paper cases.

Bake in the oven for 20-25 mins or until golden and springy to the touch. Transfer to wire rack to cool completely.

To decorate pipe the buttercream on top of each cake to form a swirled peak in the centre. Mix the marshmallows and walnuts together and divide amongst the cakes, pressing down slightly to get them to stay put. Melt the chocolate, drizzle over the tops of the cakes and leave to set.

*Chocolate Buttercream

225g unsalted butter, softened
1tbsp milk/cream
295g icing sugar
55g cocoa powder

Place the butter and milk in a bowl and beat until fluffy. Gradually sift in the icing sugar and cocoa powder and beat until smooth.

Oh Jesus Hippy that looks complicated for a beginner! I'll need to get a piping thing. Having a baking day with one of the girls in a few weeks so will try them when I have some help - thanks a million! :thnk

Ah not complicated at all missus, the piping is more about presentation than actual need, sure lash it on with a spoon and it'll be grand, they'll only be eaten anyway. I did the ginger icing with a butter knife as somewhere in the 3 moves in the last year my icing nozzles and bags went AWOL.

The hardest part of that recipe is the folding, best done with a metal spoon so as not to knock too much air out. I once whisked in flour to a gluten free sponge recipe instead of folding, disaster - flattest sponge you'll ever see (made a grand roulade though so was all good) :o0

Thanks SunnyK I can't wait to try them out they look so good! And as for those muffins HippyC they sound divine.... I'm going to have to wait until next week tho I'm home in bed sick!!! I've a recipe for sticky toffee pud that I will post after the weekend it's in work on my computer but it's totally yum I love the sauce.....

Well since our weekend plans were ruined by the snow, I have been very busy in the kitchen!

Off topic, but started with roast pepper and carrot soup. Followed by, white chocolate, cranberry and cinnamon biscuits... yum, total comfort food!

Is it just me or does the cold weather make you want to eat all around you?

There's a vegetable lasagne in the oven now

I feel like I have done nothing but eat all day! :-8

Well this is what I made yesterday - the Rolo cookies! They were nice but only really if you ate them while they were still warm. When they were stone cold the Rolo was just a rock hard chunk of caramel in the middle of the cookie! I ran out of Rolo's for them so made a few Terry's Chocolate Orange chip ones which were yuuuuuummmmyyyy!!

Yeah SunnyK, same experience here, first few were lovely cos I ate them straight out of the oven :-8 but later not so much. I tried zapping them in the microwave for a few seconds but they were still not the same.

Another beginner baker question here girls - if it says margarine in the recipe can you just use butter or would butter be too "heavy" for the recipe?

Caster sugar - is this much different to normal white sugar?

I'm just thinking of what I have in the presses at the moment and if I need to pick up a few bits!

I often use normal unsalted butter in the place of margarine without any problems BUT caster sugar and normal sugar are completely different! (It's a finer grain and caster sugar is POXY in your coffee if you're ever stuck - it's just not worth it, trust me :o0 )

I know I've never posted here before but just wanted to say - you should always use butter over margarine. Margarine tastes disgusting! I never use margarine - it's bad for you too, so highly refined and processed, and like I said it tastes like sh!t! So yeah you can of course sub butter for marg.

I made Banana & peanut butter muffins today (Rachel Allen recipe).
They taste yummy but they are sticking to the sides of the muffin cases. I wanted to make them for a cake sale next week so has anyone any advice on what's going wrong??
